It's rainy and the kids are cranky. Gamer Boy has been sent to his (game free) room at least 4 times today. Dancing Queen has esconced herself on the couch to engage in nonstop whining about the unfairness of life. Little Buddy keeps wailing, "I'm boooooored" every 5 minutes as if cued by some unforseen source. Even the dog looks as though she would like to take a chunk out of my pinkie toe.
I decided that the only answer is fluffy, buttery, cinnamon-sugar topped cookies:
Snickerdoodles
1/2 c light margarine
1 1/2 c sugar
1 tsp vanilla extract
2 eggs
2 3/4 c flour
2 tsp baking powder
2 tbs sugar
1 tsp ground cinnamon
1. In large bowl stir margarine, sugar, and vanilla until creamy. Add eggs and mix until smooth.
2. Add flour and baking powder. Stir until smooth.
3. Mix sugar and cinnamon in pie plate or other shallow dish.
4. Place dough in refrigerator for at least one hour in order to make it easier to handle. Roll into 1-inch balls and then roll in cinnamon sugar. Bake at 375 on ungreasted cookie sheet at least 2 inches apart for 9 minutes. Immediately remove from baking sheet and allow to cool.
Makes 36 cookies
